Preparation
First cut the paneer into small or medium cubes and immerse them in warm water until you make other things ready.
Soak the cashewnuts in warm milk for sometime and grind it into a smooth paste.
Put the tomatoes in hot water for 5 minutes. Then peel off the skin and grind it in a mixer to make a smooth puree.
Now grind the Onions and Ginger Garlic paste together.
Take a kadai heat oil and 1tbsp butter then add slit green chilly, ground onion - ginger garlic paste and fry it until it turns golden brown. when the raw smell goes, add tomato puree and stir well till the oil separates and we get a thick gravy. Slowly add cumin powder, sugar, corriander powder, chilli powder, turmeric powder and stir it again for 2-3 minutes.
Add 1 or 1 and 1/2 cup of water and boil it for ten minutes till we get a thick masala gravy. Now remove the kadai from the flame and add cashewnut-milk paste ,salt, garam masala and stir well. Keep it on the stove on low flame and let it boil for two minutes.
Yummy! Now add butter and Paneer (immersed in hot water) and cook for 2,3 minutes stirring.
If there's no milk, you can just add cashewnut paste.
Garnish with Fresh Corriander Leaves :-P It will be more tasty when it is garnished with grated paneer :-)
You can add more Butter if you wish !
