Green Brinjal Stir Fried
Ingredients
Green Brinjal 3
Onion 2
Green Chillies 2
Salt To Taste
Water 1/2 cup
Coconut Oil 2 tbsp
Curry Leaves A sprig
Preparation
Wash the brinjal and cut off upper stalks. Split them in quarters and cut them into halves. Split Green chillies.
Take a kadai, add the brinjals, Onion (thinly sliced) , green chillies, water, salt, keep it on a low flame till the brinjal and onion becomes tender.
Now slowly stir it till it absorbs the whole water. Add coconut oil (u can use vegetable oil too) and curry leaves. Allow it to fry till it turns to light golden brown colour.
Guys! It's a very very simple and tasty dish when you are confused what to do when only this vegetable is left in your veggy basket !!
It goes well with curd rice and you can also mix it in your rice and have it :-P
