Chana Masala
Chana Masala Ingredients
Chickpeas 1 cup
Onions 2
Tomatoes 2
Green Chillies 2
Turmeric powder 1tsp
Red chilli powder 1tsp
Cinnamon 1 small piece
Cloves 3 to 4
Cumin Seeds 1tsp
Garam masala 1tsp
Jaggery 2 cubes
Tamarind size of a Gooseberry
Water 2 & 1/2cup
Salt To taste
Fresh Coriander Leaves A bunch
Preparation
Soak the Chickpeas overnight adding a pinch of baking soda. Next day pressure cook it with two cups of water and salt. (3 to 4 whistles).
Wash and cut the onions,put it in hot water for sometime so that the raw smell goes, grind and keep it aside.
Put the tomatoes too in hot water for sometime then slowly peel off the skin,put it in a mixer and make a puree.
Now take a kadai, heat oil on a medium flame and add cinnamon, cloves, jeera, green chillies (slit) saute it for 2minutes. Next add the ground onions, saute till it turns to golden brown with a tasty smell.
Add Tomato puree,red chilli powder,turmeric powder, garam masala powder and stir well. Add water, salt and allow it to boil for 5 minutes.
And now add the Chickpeas to the gravy and stir well.
When the masala becomes thick leaving oil , add tamarind paste (little bit watery), cubes of jaggery (crushed) and allow it on low flame for 5 minutes.
Garnish with fresh coriander Leaves .
It's really tasty with Bhatura !!!!!
If you wish you can add Ginger-Garlic paste - it's optional ..!
You can add sweetness and sourness as per your taste :-)
