Ghee rice with Chicken stock

Ghee rice with Chicken stock

Ingredients

Basmati Rice                                                                                             2 cups
Onion                                                                                                    2 (medium)
Green chilly                                                                                              1 (big)
Chicken Stock                                                                                  1 cube (Maggie)
Fennel seeds                                                                                           1/2 tsp
Cinnamon                                                                                                 1 piece
Cloves                                                                                                          3
Star anise                                                                                                   1 - 2 
Cardamom                                                                                                 1 - 2
Cashewnuts                                                                                               5 - 6
Raisins                                                                                                       5 - 6
Ghee                                                                                                        3 tbsp
Salt                                                                                                         To taste
Coriander leaves                                                                                   To garnish

Preparation 

Saok basmati rice in cold water for sometime, wash it, drain water and keep it aside.

Take a pressure cooker, heat ghee, add fennel seeds, cinnamon, cloves, cardamom, star anise, saute for two minutes.

Add onions (sliced), saute well till it turns not so brown, just light brown.

Now add the basmati rice and saute for two minutes, add 4 cups of water, chicken stock, salt, Green chilly(half slit) and pressure cook it for one whistle.

When it is free from pressure,

Take a kadai fry the cashewnuts and raisins in ghee and add it to the rice.

Garnish with coriander leaves.  It really tastes different :-)
