Egg Curry

Egg Curry



Ingredients

Egg                                                                                                       4 to 6
Onion                                                                                              2 (medium)
Green chillies                                                                                         2 (slit)
Tomatoes                                                                                         2 (medium)
Coriander powder                                                                               4 tbsp
Kashmiri Chilli powder                                                                        2 tbsp
Turmeric powder                                                                                1 tsp
Garam masala powder                                                                      3/4 tsp
Fennel seeds                                                                                     1/2 tsp
Coconut milk                                                                                      1 cup
Salt                                                                                                    To taste
Oil                                                                                                  2 and 1/2 tbsp
Water                                                                                              As required
Coriander leaves                                                                              To Garnish
Curry leaves                                                                                       A sprig

Preparation

Boil the eggs and allow it to cool. Cut the onions into slices and tomatoes into small pieces.

Take a kadai heat 2 tbsp oil, add fennel seeds and when it splutters, add onions and saute well till it turns light golden colour.

Add tomatoes,saute it till it is ready, add coriander powder, kashmiri chilli powder (it gives colour and taste to the gravy), turmeric powder and mix it well. We can add 1 tsp of oil and stir fry. Add water as required to make it a gravy. But not too much of water.

Let it boil for 15 minutes on medium flame. Keep stiring often and add salt to it. 

When the oil separates, add the boiled eggs to the gravy. Make 2,3 vertical cuts on 2,3 sides of the the egg before adding it to the gravy.Allow it to boil for 5 minutes on low flame.

Now add coconut milk and let it boil for 5 minutes. Remove it from the stove.

Add curry leaves and garnish with fresh coriander leaves !!
