Carrot Thoran


Ingredients

Carrots                                                                                                         5 to 6
Onion                                                                                                           2 (big)
Green Chillies                                                                                              2 to 3
Grated coconut                                                                                           1/2 cup
Cumin powder                                                                                             1 tsp
Mustard seeds                                                                                            1/2 tsp
Oil                                                                                                           As required
Salt                                                                                                           To taste
Curry Leaves                                                                                            A sprig

Preparation

Grate the carrots and keep it aside. Cut the onions into small pieces. Slit chillies.

Heat oil add mustard seeds and when it splutters, add chillies, onions, a pinch of salt, cumin powder, curry leaves, saute it well till it turns light brown colour.

Add grated carrots, salt and stir well. Sprinkle a little water and close with a lid stirring frequently.

When the carrots are cooked, becomes tender, add grated coconut, a spoonful oil and stir well on low flame till the water is fully absorbed.

If you use olive oil , I will be more tasty and healthy :-)
