Mixed Vegetable Curry


Mixed Vegetable Curry

Ingredients

Carrot                                                                                                     1/4 cup
Beans                                                                                                     1/4 cup
Potato                                                                                                    1/4 cup
Green peas                                                                                             1/4 cup
Tomatoes                                                                                            2 (medium)
Onion                                                                                                    2(large)
Coriander powder                                                                                    2 tbsp
Red chilli powder                                                                                     2 tsp
Turmeric powder                                                                                     1/2 tsp
Garam masala powder                                                                            1/2 tsp
Cashewnuts                                                                                           8 to 10
Cumin seeds                                                                                          1/2 tsp
Water                                                                                                    1 cup
Oil                                                                                                         2 tbsp
Salt                                                                                                      To taste
Coriander Leaves                                                                                To Garnish


Preparation


Cut the vegetables into small pieces except green peas :-p 

Cut the onion and put it in hot water for 10 minutes and grind it in a mixer (a little bit coarse) .

Boil the tomatoes and peel off the skin and make puree.

Half boil the vegetables adding turmeric powder, salt and keep it aside .

Soak the cashewnuts in warm water for 15 minutes and make it a paste.

Take a kadai , heat oil, add cumin seeds and when it splutters add onion paste, stir it well till it turns golden brown.

 Add the tomato puree,stir well, allow it to boil for 2 minutes. Now add coriander powder,chilli powder, mix it well and add 1 cup water and salt. 

Add the vegetables to the masala mix and allow it to boil till the vegetables become tender and blended with the masala.

When it is ready add garam masala to it. Atlast add the cashewnut paste and let it boil for 10 minutes.

Garnish it with fresh Coriander Leaves !!!

You may think Why my combination with curries are always chappathis... My kids love chappathis and i make them often for my kids !!
